Chocolate Covered Funfetti Cake Batter Truffles

Looking for a yummy and easy treat for Valentines day or maybe just for a girl's night like me? Well, any special night deserves something sweet and I came across these delicious cake balls. Normally I have found cake balls very hard to make but this recipe keeps them simple and easy to make. The orginal recipe calls for white chocolate (I had a little mishap of bruning it) but used milk chocolate instead.


Ingredients:
1 cup white cake mix
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup butter, melted
1/2 teaspoon vanilla
2 tablespoons milk
1 tablespoon Sprinkles
1 1/2 cups semi-sweet chocolate chips (can switch out for dark or white chocolate, if desired)

Directions:


1. In a large bowl, whisk cake mix, flour and sugar. 




2. Stir in melted butter, vanilla, milk and sprinkles. Mixture should be moist and be able to hold its shape easily when formed. 




3. Scoop out mixture and form into  a ball shape. Refrigerate for 20-30 minutes.


4. Melt chocolate slowly in the microwave. After burning the first batch, I did a smaller number of chocolate for only 20-30 seconds at a time. 

5. Using a fork/spoon, drop one of the cake batter truffles into the chocolate and roll around to coat. Tap off the excess gently and transfer to a cookie sheet/plate lined with wax paper. 



6. Refrigerate until chocolate has hardened and then ENJOY!
