Chocolate Chip Oatmeal Muffins

With an upcoming wedding and a honeymoon to look good for, I have been all about clean eating. I was searching for a yummy but healthy dessert or snack for those after-dinner cravings. I came across these delicious looking muffins from Olives n' Wine which inspired me to create something similar.


Ingredients:

  • 2 ripe bananas
  • 1/3 cup peanut butter
  • 1 tbsp cinnamon
  • 2 cups oatmeal
  • 1/3 cup dark chocolate chips (milk chocolate works too)

Directions:

  1. Preheat oven to 350 degrees and place about 8-10 cupcake liners in muffin/cupcake pan
  2. In a bowl, mash banana and peanut butter
  3. Sir in the cinnamon, oatmeal and chocolate chips
  4. Fill muffin liners about 3/4 - the top of the cupcake liners (depends how big you want them)
  5. Bake in oven for 20-25 minutes
  6. Allow to cool for a few minutes and Enjoy!!
They turned out great and are delicious! Next time, I might try them with some blueberries for a healthier alternative to regular blueberry muffins.

Venetian Tea Party Bridal Shower





My sister planned an amazing bridal shower for me with the help of my mom, cousin, and grandma. She went with a Venetian Tea Party theme since Lloyd and I really wanted to go to Italy for our honeymoon.




















We saw great pictures of Venice, learned some Venetian words, and even got to see some real Venetian masks.

We had everything from tea sandwiches and bruschetta to biscotti and hot tea.


















My grandma did a great job with the games having everyone creating stories about Lloyd and I to bringing in an "Italian model" where we had to write down what she wore. My aunt created a story game and gave me "house essentials".


My lovely bridesmaid, Rebekah did a great job creating a replica of my bouquet and even made my veil and my sash that read, "Future Mrs. Calicott".





















I was then presented with a porcelain teapot that everyone at the shower had signed. Kelsey also had special gifts for all the bridesmaids.




Next came present time and my little ring bearer helped me out with opening all the gifts.
























Last but not least was the delicious dessert with everything from cannolis and Italian wedding cake to chocolate covered strawberries and Tiramisu.
