Chocolate Lava Cake

One of my favorite desserts to get at a restaurant is that delicious warm chocolate lava cake. Well, why not have it whenever you want without leaving you house?


Ingredients
  • 1/4 cup butter
  • 1/2 cup semi-sweet chocolate (Or more!)
  • 1/2 cup powdered sugar
  • 1 whole egg
  • 1 egg yolks
  • 3 tablespoons flour
  • 1/2 teaspoon powdered sugar, extra for dusting
  • 1/2 teaspoon cocoa powder, for dusting on top

Instructions

Melt chocolate and butter in a pot over simmering water, stir until smooth

Stir in powdered sugar

Add eggs and egg yolks and keep stirring

Stir in flour until well blended

Split between cups and bake for 13-14 minutes until the sides are set

Dust powdered sugar and cocoa powder on each right before serving

Cheesy Broccoli Chicken and Rice Casserole

My husband is always talking about a chicken casserole with Ritz crackers on top. So I searched around for different recipes and decided to create my own based on a few. I tried to add a few healthier options but there is only so much you can change with rice and Ritz crackers. :)



Ingredients

  • 2 cups of diced cooked chicken
  • 2 cups broccoli florets, cut down into bite-sized pieces
  • 1 can cream of chicken soup
  • 2 cups cooked rice (I used yellow rice, but any rice works)
  • 1½ cups shredded cheese (I used cheddar but any type works)
  • ½ cup mayonnaise (substitute greek yogurt for healthier option, like I did)
  • ½-3/4 cup crushed Ritz crackers
  • 2 tbsp melted butter (substitute coconut oil for healthier option)

  1. Preheat oven to 350 degrees. 
  2. Combine all ingredients into a greased 8x8 or 9x9 baking dish.
  3. Mix up all the ingredients except Ritz crackers and butter right in the baking dish.
  4. Sprinkle the crushed Ritz crackers over the top of the casserole.
  5. Drizzle melted butter over the top.
  6. Bake for 30-35 minutes or until casserole is heated through.


All in all, it turned out delicious and we will definitely be making it again soon! Next time we may have to double or even triple the recipe because it seemed my husband wanted to eat the whole casserole in one sitting!

Bachelorette Part 2 at ICEBAR

Since Victoria wasn't able to make it for the first weekend, we decided to have a special night out. We had been wanting to try ICEBAR in Orlando for a while so what better chance than a Bachelorette celebration. 

While the ICEBAR was much different than I expected, it was definitely somewhere fun and chill to hang out. I thought the ICE part would be a lot bigger, but instead it was a smaller room in the back while the Fire bar took up most of the space. 




Upon entering the ICEBAR, an employee helped you with some gloves and a jacket. As you enter, you are welcomed with a cold breeze and soon come to find everything in the ICEBAR is made of ice, including the chairs and cups.





When we needed a break and time to thaw, we went back out to the Fire bar where the music blasted and the dancing began. We even got some awesome drinks on fire!






The cost to get in is reasonable if you go online to ICEBAR.com and buy your tickets ahead of time or you can check Groupon for deals (what I did). Located right in the heart of Orlando on I-Drive, ICEBAR is perfect for any occasion and a definite must see!

Bachelorette Weekend!

This post is long over due but there is no better time than the present. We headed down to Fort Myers for the weekend for a weekend of fun! Thanks to my sister and my bridesmaids, my bachelorette weekend was a success! Each girl planned a different aspect of the night. My sister planned a scavenger hunt the first day:



STARBUCKS! "The scavenger hunt begins now. All of your drinks are waiting but you can't get them until you earn them." We each had Harry Potter themed questions we had to answer in order to get our drinks.


Clue #1:
"Good job answering your questions!!! Now that we have our refreshments the real hunt begins! Now we all know that Katie has wonderful style and she would never make us wear something ugly at her wedding but there are some bridezillas who want her bridesmaids looking... well ugly! So know we are going to go hunting for those ugly bridesmaid dresses! Don't forget to remember your name from your cup. Head to the thrift store on... to pick up your ugly dresses. Don't say I didn't warn you!"




THRIFT STORE!
"Look for the dress that matches the name from your cup!"





Clue #2: 
"You all look FABULOUS!!! Now that we all look ready for a wedding lets jump to the sky and head to the zone!!! You know what that means? I bet you don't. Try to figure it out we do have Google you know! Don't forget to keep on that dress!!!"



    SKY ZONE

"Great you arrived now do you know what I mean about jumping to the sky and heading to the zone? I know cheesy but get ready to jump because we have a half hour to jump in our lovely bridesmaid attire!!!"





















Clue #3: 

"You are so close to the end just a little bit more! So now it's Katie's turn to see if she knows her sister!!! This past Valentine's Day I started something that I absolutely love!!! Now Katie what is it? Head there next to give Lloyd a shout out!!!"
WICKED WINGS AND THINGS
"In honor of Lloyd, we are going to Chug A Mug!!!"


Clue #4: 
"Did the beer go down well? How about those wings, they smell good? Your next stop is your last, but it is by far the best! Head to the Beach where your sea chariot awaits!!!"

Dolphin/Sunset Tour
"Welcome to your final destination! I hope you had fun today, but now it is time to eat wings and relax on the beautiful blue ocean as the sun sets! Remember we are on the west coast now so you get the sunset in full view! Don't forget to watch for Dolphins this is after all a dolphin tour!!! Enjoy and don't get too full
      on wings and wine!!!"


The next day we headed to the beach for a day of drinks and fun in the sun!

                                       Fort Myers beach was gorgeous and the drinks were delicious! We enjoyed the water and even played some cornhole!



Later we went back to the hotel to shower up for a night out! We went to get some dinner and then off to dance the night away. Things got a little crazy, but we had sometimes we won't forget!





A bachelorette is never complete without Penis candy and some pickle sharing!
