Chocolate Lava Cake

One of my favorite desserts to get at a restaurant is that delicious warm chocolate lava cake. Well, why not have it whenever you want without leaving you house?


Ingredients
  • 1/4 cup butter
  • 1/2 cup semi-sweet chocolate (Or more!)
  • 1/2 cup powdered sugar
  • 1 whole egg
  • 1 egg yolks
  • 3 tablespoons flour
  • 1/2 teaspoon powdered sugar, extra for dusting
  • 1/2 teaspoon cocoa powder, for dusting on top

Instructions

Melt chocolate and butter in a pot over simmering water, stir until smooth

Stir in powdered sugar

Add eggs and egg yolks and keep stirring

Stir in flour until well blended

Split between cups and bake for 13-14 minutes until the sides are set

Dust powdered sugar and cocoa powder on each right before serving

Cheesy Broccoli Chicken and Rice Casserole

My husband is always talking about a chicken casserole with Ritz crackers on top. So I searched around for different recipes and decided to create my own based on a few. I tried to add a few healthier options but there is only so much you can change with rice and Ritz crackers. :)



Ingredients

  • 2 cups of diced cooked chicken
  • 2 cups broccoli florets, cut down into bite-sized pieces
  • 1 can cream of chicken soup
  • 2 cups cooked rice (I used yellow rice, but any rice works)
  • 1½ cups shredded cheese (I used cheddar but any type works)
  • ½ cup mayonnaise (substitute greek yogurt for healthier option, like I did)
  • ½-3/4 cup crushed Ritz crackers
  • 2 tbsp melted butter (substitute coconut oil for healthier option)

  1. Preheat oven to 350 degrees. 
  2. Combine all ingredients into a greased 8x8 or 9x9 baking dish.
  3. Mix up all the ingredients except Ritz crackers and butter right in the baking dish.
  4. Sprinkle the crushed Ritz crackers over the top of the casserole.
  5. Drizzle melted butter over the top.
  6. Bake for 30-35 minutes or until casserole is heated through.


All in all, it turned out delicious and we will definitely be making it again soon! Next time we may have to double or even triple the recipe because it seemed my husband wanted to eat the whole casserole in one sitting!
